Black Beans Soup

Black beans soup with garlic and raw veggies!

Serves: 2

Preparation Time: 15 minutes

Cooking Time: 30 minutes

Ingredients:

1/2 pound boiled black beans

1 medium white onion, finely chopped

2-3 cloves of garlic, finely chopped

1 quart chicken stock

1 cup lettuce, finely chopped

1 cup avocados, chopped

1 cup carrots, julienne

Juice of 1 lemon

Salt and pepper taste

Method:

1. Heat chicken stock in a deep bottom pan over medium-high flame. Add in black beans, garlic, salt and pepper. Cover the pan with a lid. Let it simmer over low heat until water reduces to half.

2. Once ready, pour the soup into two soup bowls. Top the bowls with lettuce, avocado, onion and carrot. Add some lemon juice.

3. Serve hot!
